For a brief time, Lemuria gathers autumn onto a plate. The guinea fowl – rara avis – pan-seared, tender, and reimagined as roulade—meets the warmth of walnuts, the sweetness of beets, the depth of truffle. It is a dish alive with the season’s color and scent, a momentary indulgence offered only while autumn lingers.
